Contrary to what this resort is known for, Coronado Springs isn’t just for those visiting on a business trip. Yes, the main tower has a full-fledged Convention Center, but this resort is full of fun for the whole family! This Spanish-style resort with a modern flare gives an opulent-palace vibe as soon as you walk in the Grand Destino Tower. Here you’ll find, the design of the resort was inspired by Disney’s famed Mary Blair, the artist who themed, it’s a Small World and Antoni Gaudi, a leader in modern architecture, is his time. You’ll see touches here and there to remind you of the collab between Walt Disney himself and the Spanish surrealist artist, Salvador Dali in the cartoon Destino. The Grand Destino tower is the newest addition to Coronado and boasts the most up to date and beautifully decorated rooms, but of course these rooms are pricier than staying in the standard rooms located in Casitas, Rancheros or the Cabanas areas.

Pro-tip: When booking, ask for the Cabanas area. Why, because it’s the closest to the Dig Site, home to the resort’s main pool area and close to one of the four bus stops on site. If you book with a travel agent, they will have to call and put this request in for you.

Accommodations:

     

           The standard rooms are very spacious with two Queen beds or one King bed options. These rooms come with a small sitting area with a chair. Next to this is a large cabinet that runs the length of the wall and stores the rooms mini fridge and Keurig-style coffee maker and built in dresser for unpacking. Each room is equipped with a Disney-themed echo dot. Please ask it to tell you a joke. It will not disappoint. The bathroom has a vanity with a double sink area that can be closed off to the main room. The toilet and shower area is also separate with a door that closes off to the dressing area. The beds are raised to allow luggage to fit under each. The beds were comfortable, and the room was spacious enough for a family of four.

Pro-tip: The thermostat is set at 68, but if you call the front desk they will come to your room and turn it down to 66.


The Dig Site:

                The Spanish and Southwestern theme of the resort is best seen here at this huge resort pool. The large Myan pyramid and waterslide is to mimic an adventure of Francisco Vazquez de Coronado, one of the great conquistadors and explorers of history. The pool area is called the Lost City of Cibola, after his expedition looking for the Seven Cities of Cibola, or the Seven Cities of Gold. Instead, he found the Grand Canyon. I haven’t been but have heard the views are worth more than gold. But I digress.

                Cast members make this place a family-friendly pool party daily with music, games and trivia. The Dig Site also hosts a Light the Night Glow party every Monday, Wednesday, and Saturday from 8:30-9:30 p.m. Cast Members also offer smores nightly between 6:30-7:30 p.m. The Dig Site is also home to the largest Hot Tub, on Disney property, allowing for up to 22 people and offers the perfect relaxation spot after a long park day.

The Pool Bar: Siestas

                The main pool area is also the location of the resorts pool bar, Siestas. The food did not disappoint, and the drinks were strong and delicious! For those with picky eaters, yes, they have chicken tenders, and they were Weston, approved. He is our youngest and sort of a chicken tender connoisseur with specific requirements for his chicken tendies. Items on this menu include Mojo Shrimp tacos, Southwestern BlT sandwich, Bacon Onion Jam Burger and our favorite, the Southern Crunch Quesadilla. This quesadilla was easily shareable and was packed full of southwestern flavors, cheese, black beans, corn relish and crispy chicken. I washed mine down with a Wildberry Lemonade made with Tito’s vodka, wild berry puree, agave and fresh lime. It was a bit sweet for this dry-wine lover, but I’d give it an 8/10.  Siestas is open from 11 a.m. to 8 p.m.

Iguana Arcade


                Next to Siestas is an area with two ping pong tables, shuffleboard, and a playground for the little ones. You’ll also find the resort’s Iguana Arcade, offering video games, pinball and air hockey. Hours are 8 a.m. to 6 p.m. The resort’s recreation team also puts on a tournament daily in the arcade from 4-5 p.m. to test your gaming skills.

    There is plenty of culinary surprises to be had here at this resort. When you walk into the El Centro, the main building for Coronado’s dining and shopping you’ll notice that it is large and open to mimic an outdoor market. You’ll pass by a beautiful marble fountain that sits in front of Panchito’s, the resorts gift shop. Panchitos is named after the parrot in the Three Caballeros, a Disney cartoon featuring Donald Duck traveling around South America with two compadres. Here you can find lots of Coronado and Disney merchandise as well as any drugstore like items you may have forgotten from home.

Café Rix

 As you walk down the artfully decorated passageway with lovely hanging Spanish-style lanterns, you’ll first come to Café Rix. This is the resort’s grab and go area with pastries, breakfast burritos, yogurt, fruit, juice and milk. You can also order specialty coffees like a Caramel Machiatto or White Chocolate Mocha, or you can order a specialty smoothie or frappe.

Next, you’ll see Rix Sports Bar and Grill. This sports lounge has over 31 televisions so you don’t miss a second of whatever sports event you must see. Here you can enjoy carefully crafted cocktails and local daft beers. The menu is described as American bar fare, offering an All-American Bacon Cheeseburger and a Rix Steak Sandwich that has shredded Strip Steak piled high on an Asiago Bun, with Provolone, Red Onion, Chimichurri and Horseradish. Yes, you can get Chicken Tenders here. This restaurant is open for Breakfast, Lunch and Dinner.

Just like other Disney Resort’s, there is a cafeteria area called, El Mercado de Coronado Food Court. El Mercado has a pizza station offering personal pizza’s and subs. There is a coffee and bakery station, as well as a bowel station offering items like Street Corn and Nachos. There is also a carving station at dinner that offers a rotating menu.

Maya Grill

The fancy table-service restaurant at Coronado is the Maya Grill, which has Latin-American cuisine and is open at dinner from 5 to 10 p.m. The Flautas, Nachos, and Steak Caesar Salad was delicious, but having only planned one dinner at the resort, I wish I had chosen a different location. This restaurant did not offer Chicken Tenders to the dismay of our youngest. The kid’s menu was very limited, so we grabbed dinner for him after we left. The guac was definitely on point and definitely the star of the show.


Pro-tip: Skip the sizzling fajitas at this restaurant. It is a tiny portion for the price.

As you leave the main resort and head back across the bridge toward the Dig Site, you’ll pass by the Three Bridges Bar and Grill at Villa del Lago, this open-air restaurant has great views of the water and resort. The menu offers a little something for everyone including a Churro Sundae! The shareables include House-Made Guacamole, White Queso Dip and a Roasted Corn Dip and these pair nicely with their signature Sangria Flight. The main menu has Southwestern and American influences like the Three Bridges Signature Burger featuring Oaxaca cheese, Tamarind mustard, and pineapple salsa or the Pork Carnitas Tacos. The Three Main Bridges restaurant is also home of Sangria University. This experience is held on Saturdays and Sundays for two hours and is $69 to $79 per person. You must be 21 years of age and have made a reservation for this class.


The Dahlia Lounge


The Grand Destino Tower is home to the swanky Dahlia lounge located on the top of the tower and is a great area to grab a drink and watch the Epcot fireworks. This artfully designed lounge is inspired by Spanish Surrealist Salvador Dahli. The menu looks amazing. They offer Tapas, or small plates of Spanish food. Some of their offerings include Beef with Chorizo Spice, Crispy Serrano Ham, Manchego, and Sweet Pepper Relish on a Brioche Poppy Seed Bun or try the Bocadillo, Mushroom Steak marinated in Beet juice, Pickled Onions, Arugula, and Grain Mustard and Mayo on a Toasted Baguette served with Paprika Chips. They also have a Spanish version of Charcuterie, with Olives, Fig Jam, Charred Bread and assorted Meats and Cheeses. If you have a sweet tooth or looking for a sweet way to end the night, they have a Cookie Flight with Dulce de Leche Alfajores, Mantecados, and Peanut Cookes, or just go with some warm Churros with Chocolate sauce. This lounge has an impressive cocktail and wine list with something to please everyone. Hours for the lounge are 5 p.m. to 12 a.m.

Close to the main lobby and down the grand staircase is the Barcelona Lounge. This is another great option for breakfast at this resort. They have a full coffee bar and some delicious looking adult beverages for those wanting more of a brunch vibe while on vacation. They offer breakfast sandwiches like Ham, Egg and Cheese Croissants, as well as assorted pastries. The Spanish Coffee menu is what really shines here offering Café Bombon which is an Espresso and Sweetened Condensed Milk, or you could order a Barraquito with or without alcohol. This drink is composed of Licor 43, Espresso, Sweetened Condensed Milk and Lemon Zest. Come back in the evening and grab some tapas and one of their signature cocktails including Costa Del Sol, Hendrick’s Gin, Sweet and Sour, Pineapple, and Fresh Fruit, or try the Santa Maria Collins, made with Rose d’Argent Strawberry Gin, Lime and Soda Water. Breakfast is served from 6:30 a.m. to 12 p.m. and opens for Bar/lounge offerings from 3 p.m. to 12 a.m.
